Job Summary
- We are a big Supermarket and Mall seeking an experienced, highly organized, and results-driven Butchery Manager to oversee the day-to-day operations of our butchery section.
- The successful candidate will be responsible for ensuring efficient production, proper meat handling, inventory control, quality assurance, cost management, and excellent customer service while maintaining high standards of hygiene and food safety.
Key Responsibilities
- Manage the daily operations of the butchery section, ensuring smooth and efficient workflow.
- Supervise, train, and coordinate butchery staff to achieve operational and sales targets.
- Oversee the receiving, inspection, weighing, storage, processing, cutting, packaging, and display of meat products.
- Ensure proper handling and storage of fresh and frozen meat in line with food safety and hygiene standards.
- Monitor stock levels, meat yields, wastage, damages, and expiry to minimize losses.
- Maintain accurate records of meat received, processed, sold, transferred, and remaining in stock.
- Conduct regular stock counts and reconcile physical stock with system records.
- Monitor product quality, freshness, presentation, and proper pricing.
- Ensure all butchery equipment is properly maintained and promptly report faults or maintenance requirements.
- Control operational costs and minimize unnecessary wastage while maintaining product quality.
- Coordinate with Procurement and Inventory teams to ensure adequate availability of meat and other required materials.
- Monitor customer demand and recommend fast-moving products and appropriate stock levels.
- Ensure compliance with company policies, food safety regulations, health and safety standards, and internal controls.
- Investigate and report stock discrepancies, product losses, customer complaints, and operational incidents.
- Prepare and submit regular reports on sales, stock, wastage, production, and overall butchery performance.
- Maintain a clean, organized, and hygienic butchery environment at all times.
- Work closely with other departments and management to improve sales, customer experience, and operational efficiency.
Requirements
- HND / B.Sc Degree in Food Science, Food Technology, Animal Science, Business Administration, or a related field.
- 2 years of relevant experience in butchery, meat processing, food production, supermarket retail, or a similar environment.
- Good knowledge and practical understanding of various types of butchery machines and equipment, including their proper operation, cleaning, routine maintenance, and safe handling.
- Strong knowledge of meat handling, cutting, storage, preservation, and food hygiene practices.
- Good understanding of inventory management, stock reconciliation, wastage control, and cost management.
- Strong numerical, analytical, organizational, and problem-solving skills.
- Ability to prepare and interpret operational and sales reports.
- Good knowledge of health, safety, and food hygiene standards.
- Proficiency in Microsoft Excel and willingness to work with inventory/POS or ERP systems.
- Strong communication, leadership, and interpersonal skills.
- Ability to work under pressure and meet operational and sales targets.
