Job title : Fine Dining Restaurant Manager

Direct Reports: Hostesses, Waiters/Waitresses, Sommelier (where applicable)
Reports to: Food & Beverage Manager / General Manager

Main Function

• The Fine Dining Restaurant Manager is responsible for overseeing the daily operations of the fine dining restaurant, ensuring an exceptional, refined guest experience consistent with luxury fine dining standards.

Role Responsibilities
Service Excellence:

• Ensure impeccable, personalized service delivery in line with fine dining etiquette and standards.
• Oversee reservations, seating arrangements, and VIP guest experiences.
• Manage private dining and special event requests within the restaurant.
• Resolve guest concerns promptly, professionally, and discreetly.

Team Leadership:

• Recruit, train, and coach staff on fine dining service standards, menu knowledge, and wine/food pairing.
• Schedule staff to ensure appropriate coverage for service periods.
• Conduct pre-service briefings and performance evaluations.

Operations & Financial Management:

• Manage restaurant inventory, cost control, and profitability.
• Work closely with the Executive Chef on menu planning and execution.
• Ensure compliance with health, safety, and licensing regulations.
• Prepare performance reports for management.

Qualifications and Requirements
Education:

• Degree or Diploma in Hospitality Management or related field.

Experience:

• Minimum of 5-7 years' experience in fine dining restaurant operations, including at least 2 years in a managerial capacity in an upscale/luxury establishment.
