We are seeking a talented and experienced Chef de Partie (Suya Grill) with a strong background in authentic Nigerian suya preparation and grilling techniques. The ideal candidate will be responsible for managing the grill section, ensuring consistency in flavour, quality, presentation, and food safety while maintaining high kitchen standards in a fast-paced environment. Key Responsibilities * Prepare, season, and grill meats, chicken, fish, and vegetables using authentic Nigerian suya techniques.
* Set up and manage the grill station, ensuring all mise en place is completed before service.
* Maintain consistency in marinades, spice blends, and grilling temperatures.
* Ensure all grilled items meet quality, taste, and presentation standards.
* Monitor portion sizes, control food costs, and minimise wastage.
* Adhere to HACCP and all food safety and hygiene standards.
* Work collaboratively with the kitchen and front-of-house teams to ensure efficient service.
* Support the training and development of junior kitchen staff.
* Report equipment maintenance issues promptly and assist with stock control and daily requisitions. Requirements * Minimum of 2–3 years’ experience as a Grill Chef or Chef de Partie in a busy restaurant, grill outlet, or hospitality establishment.
* Strong expertise in traditional Nigerian suya preparation and grilling methods.
* Proficiency in charcoal, open-flame, or gas grilling techniques.
* Ability to work efficiently under pressure and during peak service periods.
* Excellent attention to detail, consistency, and food presentation.
* Strong teamwork and communication skills.
* Good understanding of food safety, hygiene, and HACCP standards.
