About the Role
Bourdillon Hotel & Apartment is expanding its Food & Beverage operations with the launch of our newly upgraded Outdoor Bar and Grill Corner. We are seeking an experienced and passionate BBQ/Grill Chef to lead the grill section and deliver exceptional grilled meals and finger foods that enhance our guests' dining experience.
Key Responsibilities
- Prepare and grill a wide range of BBQ meals, finger foods, and grilled specialties to the hotel's quality standards.
- Develop and maintain a consistent, attractive, and profitable grill menu.
- Ensure proper seasoning, marination, grilling, and presentation of all food items.
- Monitor food quality, portion control, and minimize wastage.
- Maintain high standards of food hygiene, sanitation, and kitchen safety.
- Ensure all grilling equipment is properly maintained and cleaned.
- Monitor stock levels and communicate inventory requirements promptly.
- Work closely with the Food & Beverage team to ensure timely service during peak periods and special events.
- Maintain consistency in taste, quality, and presentation.
- Ensure compliance with all health and safety regulations.
- Introduce new grill and finger food ideas that attract and retain customers.
Requirements
- Minimum of 5 years' proven experience as a BBQ/Grill Chef in a reputable hotel, restaurant, lounge, or outdoor grill.
- Strong knowledge of grilling techniques, marinades, meat preparation, and finger foods.
- Ability to prepare items such as grilled chicken, fish, beef, suya-style grills, burgers, sausages, shawarma fillings, kebabs, wings, chops, and other BBQ specialties.
- Good understanding of food safety and hygiene practices.
- Ability to work under pressure and during weekends, evenings, and public holidays.
- Excellent teamwork, communication, and time management skills.
- Creative mindset with the ability to introduce innovative grill offerings.
- Culinary certification is an added advantage.
